For a food that culinary historians date to fourteenth-century Japan, sushi made a relatively tardy appearance in Maine. Before the 1980s the local lingo for raw fish was "bait." That's changed. In recent years, Japanese restaurants across the state have begun to educate Mainers in the briny pleasures of tuna sashimi and crabmeat and cucumber sushi rolls.
