Saigon Shrimp Cakes and Dipping Sauces

Serves 4
Cooking time: 10 minutes

3 scallions
11⁄2 pounds fresh uncooked shrimp
1 tablespoon fish sauce
3 sprigs parsley
1 teaspoon salt
1⁄2 teaspoon freshly ground black pepper
1 tablespoon flour
4 tablespoons vegetable oil

Coarsely chop 2 of the scallions and place in a food processor. Finely slice the third scallion and set aside. Peel the shrimp and add to the scallions in the food processor. Add the fish sauce, parsley, salt, and pepper, and process until the mixture is smooth but still has a few chunks of shrimp. Add the finely sliced scallion and process briefly.
Sprinkle the flour onto a flat work surface. Turn out the shrimp mixture and form into 8 small, flat cakes. Chill for about 30 minutes in the refrigerator.
Heat the oil in a large, heavy skillet. Add the cakes, a few at a time, and cook until golden brown. Turn and brown the other side. Remove and drain on paper towels. Serve hot.
 
Garlic & Chile Dipping Sauce
3 cloves garlic
2 fresh red chiles
juice of 1 lemon
3 tablespoons soy sauce
2 teaspoons sugar
1 tablespoon fish sauce

Chop the garlic very finely. Seed and finely chop the chiles. Mix the chopped garlic and chiles with the lemon juice, soy sauce, sugar, and fish sauce. Pour into a dipping bowl.
 
Ginger & Lime Dipping Sauce
2-inch piece fresh ginger
1 clove garlic
juice of 1 lime
2 tablespoons unsweetened coconut milk
2 tablespoons water
3 teaspoons soy sauce
1 teaspoon rice vinegar
1 teaspoon sugar
2 teaspoons fish sauce
 
Peel and thinly slice the ginger, then finely chop. Crush and finely chop the garlic. Set aside.
In a small saucepan, combine the lime juice, coconut milk, and water; bring to a gentle boil. Add the soy sauce and rice vinegar. Stir while adding the sugar; continue to stir until it is dissolved. Remove the pan from the heat and allow to cool.
Add the chopped ginger, chopped garlic, and fish sauce. Stir well, then pour into a dipping bowl.
 
Tomato & Soy Dipping Sauce
3 scallions
3 cloves garlic
1 cup ketchup
2 tablespoons soy sauce
4 teaspoons prepared horseradish
1 tablespoon fish sauce

Finely slice the scallions. Crush and chop the garlic. Combine all the ingredients; then pour into a dipping bowl.
