Variations on the Donut

Three new twists on an old fave.

The C&D
Little Bigs

Formerly known as the Crauxnut, this flaky treat is a riff on the Cronut™, a croissant-donut crossbreed invented by New York pastry chef Dominique Ansel — who inspired the South Portland pastry’s new name with a cease-and-desist letter in March. 340 Main St., South Portland. 207-747-4233. littlebigsmaine.com

The Bronut
Treats

Chef Josh DeGroot married rich brioche to the Bismarck. Their un-holey union is served weekends only and filled with sweet innards like Boston cream and orange custard. 80 Main St., Wiscasset. 207-882-6192. treatsofmaine.com

Lobster Donut
Holy Donut

Owner Leigh Kellis did the inevitable last summer and stuffed herbed lobster into her exquisite, fried potato-flour donuts. The sweet-and-savory result is still a winner after the novelty has worn off. 194 Park Ave. and 7 Exchange St., Portland. 207-874-7774, 207-775-7776. theholydonut.com
